Cuban Black Beans

Ingredients
- 2 teaspoons olive oil
- 1 1/2 teaspoons ground cumin
- 1 cup finely chopped onions
- 1 cup chopped red bell pepper
- 1 cup chopped green bell pepper
- 1 medium jalapeno pepper, seeded and finely chopped
- 8 ounces drained cooked black beans
- Pimiento strips to garnish (optional)
Instructions
- In a large nonstick skillet, heat oil; add cumin. Cook over medium-high heat, stirring 45 seconds until fragrant.
- Add onions, red and green peppers and jalapeno pepper to cumin. Cook, stirring frequently, 10-15 minutes until vegetables are soft.
- Add beans to vegetable mixture; cook, stirring gently, just until heated. Garnish with pimiento strips and serve.
