  1. 2 teaspoons olive oil
  2. 1 1/2 teaspoons ground cumin
  3. 1 cup finely chopped onions
  4. 1 cup chopped red bell pepper
  5. 1 cup chopped green bell pepper
  6. 1 medium jalapeno pepper, seeded and finely chopped
  7. 8 ounces drained cooked black beans
  8. Pimiento strips to garnish (optional)
  1. In a large nonstick skillet, heat oil; add cumin. Cook over medium-high heat, stirring 45 seconds until fragrant.
  2. Add onions, red and green peppers and jalapeno pepper to cumin. Cook, stirring frequently, 10-15 minutes until vegetables are soft.
  3. Add beans to vegetable mixture; cook, stirring gently, just until heated. Garnish with pimiento strips and serve.
